Recipe for Whole Grain Waffles

The following recipe makes two waffles about 6 inches in diameter.

Amounts

Ingredients

1.       

1 1/4 cup

Milk or soy milk

2.       

1

Whole Egg Beaten

3.       

1 tablespoon

Canola oil (cold pressed if possible)

4.       

1 tablespoon

Black Strap Molasses

5.       

2 tablespoons

Whole B nutritional yeast (OHS brand)

6.       

2 tablespoons

Raw wheat germ (e.g. Bob’s Red Mill brand)

7.       

1 cup

Whole grain or Multigrain Pancake & Waffle Mix (Arrowhead Mills brand)

8.       

1/2-1 teaspoon

Optional: Cinnamon powder

Stir all ingredients together until lumps disappear or put all ingredients in a blender to mix.  Then cook according to waffle maker’s instructions.

My daughter, Armida, age 4, enjoys these waffles for breakfast and for snacks.  I make two or four waffles at a time and freeze the leftovers.  The frozen waffles can be heated in the toaster and taken along for snacks.  The nutritional yeast and wheat germ provides added nutrition.

Recipe for Whole Grain Pancakes

The following recipe makes three+ pancakes about 6 inches in diameter.

Amounts

Ingredients

1.       

3/4 cup + 1 Tbsp

Milk or soy milk

2.       

1 tablespoon

Canola oil (cold pressed if possible)

3.       

2 tablespoons

Whole B nutritional yeast (OHS brand)

4.       

2 tablespoons

Raw wheat germ (e.g. Bob’s Red Mill brand)

5.       

3/4 cup

Whole grain or Multigrain Pancake & Waffle Mix (Arrowhead Mills brand)

6.       

1/2-1 teaspoon

Optional: Cinnamon powder

Stir all ingredients together until lumps disappear or put all ingredients in a blender to mix.  

Then cook on preheated (375 F - 400 F) lightly oiled griddle or pan. Turn when bubbles form on surface and edges begin to dry (about 2 minutes).
